Marinade and Frying

  • Oil for dip frying
  • 1/2 small size bangus-deboned
  • 1/2 Patis

Savory Sauce

  • 1/4 cup water
  • 1/2 Patis
  • 1/2 tbsp sugar
  • 1 small siling labuyo
  • 1 pc calamansi
  • 1/2 bunch wansuy/coriander leaves, chopped
  • 1 stick lemon grass, knot
  • 1 tbsp basil powder
  1. Marinade bangus with LORINS PATIS for 10 mins.
  2. Deep fry until golden brown.
  3. Combine all sauce ingredients in a pan, simmer for 5 mins.
  4. Glaze sauce on the fried fish. Serve.
