Braised Caramel Pork Belly

Preparation Time: 45 minutes Serving: 5

  • 2 tablespoons vegetable oil
  • 3⁄4 cup chopped bacon
  • 1 tablespoon minced garlic
  • 1⁄2 cup chopped onion
  • 1 large red bell pepper, sliced
  • 1 1⁄2 cups long grain rice, washed
  • 1 tablespoon tomato paste
  • 1 teaspoon turmeric powder
  • 2 tablespoons LORINS PATIS PURO
  • 2 cups coconut milk
  • 1 cup water
  • Salt and pepper to taste
  • 10 pieces shrimp
  • 1⁄2 cup frozen green peas
  • Chopped parsley
  • Lemon wedges
  1. Heat oil in a wide frying pan over medium heat. Fry bacon until brown, and set aside half. Add garlic, onion, and bell pepper, then sauté until soft.
  2. Add rice, tomato paste, turmeric powder, and Lorins Patis Puro. Mix until heated through.
  3. Pour in coconut milk and water, then season with salt and pepper. Simmer for 15 minutes, covered.
  4. Arrange shrimps, and scatter remaining bacon on top, then scatter green peas over. Continue cooking for 10 minutes, covered, until rice is tender. Sprinkle with parsley, and serve with lemon wedges.
